Cooking With Dana – Healthy Caldo De Res

Mexican beef soup is a tradition in our culture, it’s easy to make, healthy, delicious & this recipe feeds 8-10 for under $20! I still remember standing in the kitchen, stomach growling, looking up at my Nana waiting for it to be done! This is one of my favorite dishes so I hope you enjoy it as much as I do! #danacortezshowrecipe

Caldo de Res under $20

Ingredients
-3 teaspoons Extra Virgin Olive Oil
-2lbs Beef chuck or beef shank on the bone cut into 1/4” pieces.
-1 whole cabbage cored & cut into quarters.
-1 small yellow onion
-1 large can petite diced tomatoes.
-3 large carrots sliced thick. Bag baby carrots
-5 large red potatoes cut into 1/4” pieces.
-2 large ears of fresh corn cut into 6 pieces or use frozen
-1 large green zucchini or Mexican squash chopped thick
-1 large yellow zucchini chopped think $.90 cents -2 jalapeños, diced or whole
-Cilantro
-Corn tortillas
